Flexibility in Goals (updates) and Frittatas

Life always has something different in store when you make the best plans, right? My husband has to go out of town for a while and won't be able to make our first salsa lesson, which means we will have to reschedule the whole 6 week session. Bummer. :(

And after the initial "special" Krav Maga is WAY more expensive than I thought... I just can't afford that and riding lessons.

I've been doing some research and found a dance place close by that offers Zumba and yoga classes for $3 each class, no prepayment needed. Yipee! This is a good solution as I will get in some dance (although not with hubby), and some new exercise.

For the most part we have had great winter weather here and I've been doing a lot of riding. Some days good, some days challenging but we are continuing to build trust and have fun! Yesterday I rode bareback with just a halter and we did good!

I've been doing great at food prep and LOVE making frittatas. Because we have so many eggs from our chickens, I've been making deliciousness like this:
Saute any veggies you like in a little olive oil--I used diced red peppers, onion, some shredded zucchini and spinach. I added in a no-salt seasoning like Mrs. Dash. Throw in any diced protein if desired (I used turkey sausage) and I also diced one small sweet potato that had already been baked the day before. Wisk or blend 8 eggs and add a touch of milk. (I did not use any salt because the potato and sausage already had salt.) Transfer sauteed goodness to a round or square pan that can go in the oven. Pour eggs over mixture and add a little cheese on top if desired. Bake until done (this really depends on the pan). It took about 20 min in my cast iron pan and 30 min in this glass dish both at 350 degrees.

6 servings for breakfast, brunch, snack for the week. Yummo!


I've also been making some quinoa salads like this one: 2 cups cooked quinoa, 1 package broccoli slaw mix, olives, radish, cucumber in a olive oil and meyer lemon dressing ( about 2 TBL EVOO and 1 TBL fresh meyer lemon juice and zest and a touch of salt and pepper). Even my husband liked it. Great as a side dish or a main dish topped with chicken or fish. This makes a big batch, enough for the whole week.

This will be a long day for me: exercise, horse time, 2 hr drive to the university and meet with two professors to discuss finishing my bachelors, drive back to SLC and work all night and get home tomorrow morning at 8am. I'm going to be tired!!

  2. Great price for the Zumba & yoga classes. I've just started taking yoga classes & I love it. The classes are free because the teacher is going for her certification and she needs the practice. There's a new Zumba studio that just opened and I'm dying to take a class. Thanks for sharing your Quinoa salad.

My Life, Health and Fitness Goals for 2011!

  • Appreciate my healthy body by being active and fueling it with good food, understand my limitations but push through them when I know I'm not giving it my all! ( Give myself a B-/C+ for this)
  • Maintain a healthy-feel good weight, gain strength and fitness!--eh, it was a hard year. did ok

  • Maintain weight 129 lbs or less through healthy eating and exercise, continue to get lean and strong!--Finishing the year in the low 130's, which wasn't what I wanted but I'm ok with it. Did get stronger! ;)
  • Submit my story to Prevention's "Picture of Health" contest--done! 1/19/10
  • Finish Lifetime Fitness mini-indoor triathlon March 6th--done!
  • Finish 5K or longer race--done! 7K, 4/26/10
  • Goldilocks women's 60 mile bike ride May 8--Done! 47 miles
  • Finish at least one Sprint Triathlon-- Iron Girl Triathlon Las Vegas 5/15/10--DONE!!!!!!!!!!!!!!
  • Finish a century (100 mile) ride--Utah Lake Century 8/7/10--NOT done, next year
  • Finish Insanity 63 day challenge Aug 30 - Oct 31--not finished, too hard on my knees and missed weight training
  • Try Bikram (hot) yoga--done!! 11/20/10
  • Be featured in Shape Magazine--December 2010 issue--DONE!!
